



Best pancakes ever, thanks to Donna (Hay).
Ricotta hotcakes
1 1/2 cups self-raising flour
1/2 cup caster sugar
4 eggs, separated
1 1/2 cups buttermilk
1 tsp vanilla extract
200g ricotta, crumbled
1/4 cup caster sugar (extra)
1 tsp ground cinnamon
maple syrup and lemon wedges (to serve)
Maple butter
80g butter, softened
1-2 tbs maple syrup
1. Place butter and maple syrup in a bowl and stir (I usually use an electric beater to get a nice homogeneous mix) to combine. Cover and refrigerate until ready to use.
2. Place flour, sugar, egg yolks, buttermilk and vanilla in a bowl and mix to combine.
3. Whisk the eggwhite until stiff peaks form and fold through flour mixture with the ricotta (do this very gently to make sure that the eggwhites aren't flatened, this will ensure that the pancakes are nice and fat and puffy).
4. Cook over gentle consistent heat in batches for 3-4 minutes on each side or untill puffed and golden.
5. Combine the extra sugar and cinnamon and sprinkle over pancakes. Top with maple butter and drizzle over maple syrup and serve with lemon wedges.
You can also add blueberries! YUM!

I think the crowd is a whole bunch of Army or RAAF personnel gearing up for a morning run. It was funny to watch half of them having a cigarette and then starting to do their calisthenics and then run off. Silly!

Hi Mum! I was wondering when you'd work out the comments button :) Sadly no, those are weeds. I've got some pictures to post soon of the plants we have put in. We've decided to skip the temporary vege patch and go straight to the real thing, which means it'll probably be a little while before we see anything edible.
